Strawberry Rhubarb Jam is a seasonal favourite that delivers the perfect balance of sweet and tart. This small-batch recipe captures spring in a jar with fresh, juicy strawberries and tangy rhubarb slowly cooked into a thick, glossy spread.

It’s incredibly easy to make — no added pectin, no special equipment, and no complicated techniques. Just fruit, sugar, and patience.

What sets this jam apart is its pure, natural flavour. Cooking the fruit down slowly releases their natural pectins, allowing the mixture to thicken without additives. A splash of lemon juice brightens the whole batch, and a touch of vanilla can add subtle depth.

It’s ideal for spooning over toast, stirring into yogurt, layering into cakes, or gifting in little jars. Whether you're an experienced home cook or trying preserves for the first time, this jam offers a rewarding and delicious experience from start to finish.

Small-Batch Strawberry Rhubarb Jam (No Pectin)

Ingredients

  • 2 cups chopped fresh strawberries

  • 2 cups chopped fresh rhubarb

  • 1 1/2 cups granulated sugar

  • 1 tbsp lemon juice

  • 1/2 tsp vanilla extract (optional)

  • Pinch of salt

Directions

  1. Combine strawberries, rhubarb, sugar, lemon juice, and salt in a medium saucepan. Stir well.

  2. Cook over medium heat, stirring frequently, until mixture begins to bubble and fruit releases its juices (about 5–7 minutes).

  3. Reduce heat slightly and simmer for 20–25 minutes, stirring often, until mixture thickens and reduces.

  4. To check doneness, place a spoonful on a chilled plate — if it wrinkles when pushed, it’s ready.

  5. Remove from heat. Stir in vanilla if using.

  6. Let cool slightly, then ladle into sterilised jars. Refrigerate for up to 3 weeks or freeze for longer storage.

Chef's Recommendation

"A sharp knife is your best friend in the kitchen. For recipes like this, I always reach for my Chikashi chef knife - it gives me the control and precision I need for perfect results every time."
Chef's Note: A sharp knife not only makes prep work faster but also safer - dull knives require more pressure and are more likely to slip.
